If you’ve been eating pizza the same old way your whole life, Pizzeria El Jefe: Mexican Pizza Revolution is about to ruin you for anything ordinary. Tucked along Broadway across from the Chula Vista Center and next door to Tacos El Gordo, this family-run gem has been quietly turning heads in the South Bay with a concept that sounds simple but delivers something truly special: classic pizza craft meets the bold, soulful flavors of Mexican street food.

I’ll be honest. This wasn’t my first visit to El Jefe. I had the pleasure of stopping by their old spot on Broadway, closer to Main Street, a while back, and it’s still my favorite spot for Mexican-inspired pizzas. It was a small, no-frills location, but what came out of that kitchen was anything but small. The flavors hit like a taqueria and a New York slice shop had the best collaboration anyone could imagine.

I have been meaning to visit their new location for a long time, and last week I finally got the chance.

Pizzeria El Jefe: A New Home With Room to Grow

Walking into the new location, the first thing you notice is the space. Where the old spot was cozy to the point of snug, this new place genuinely invites you to settle in. There’s room for the whole family, a table with friends, or just stretching out and enjoying your meal without feeling like you’re eating in a phone booth. It’s still warm and neighborhood-y, not corporate or polished, but it gives El Jefe’s loyal following the room they’ve deserved all along.

I had the pleasure of meeting the owners, Jose and Anna, who were exactly what regulars always say: warm, genuinely happy to see you, and eager to talk about their food. There’s nothing performative about their hospitality. You can tell this place is their life’s work and they’re proud of it. They walked me through a few of their favorites on the menu and even invited me back into the kitchen to meet Diego, who was working the pizzas with the kind of calm focus that tells you everything you need to know about why those crusts come out so right. Watching him layer toppings with real intention, not just piling things on, was a little reminder that this is a kitchen that actually cares.

The Pizza: Where Things Get Serious

El Jefe calls itself part of a “Mexican pizza revolution,” and after tasting their pies, that’s not hype. It’s just accurate. These aren’t your standard combination pizzas with a tortilla twist. The menu reads like someone mapped out the best dishes from their favorite taqueria and said, “What if all of this was on a perfectly made pizza?” The crust is crispy without being crackery, sturdy enough to hold generous toppings without going soggy, and it has just enough chew to remind you it’s real dough, not a cracker.

A few standout pies you absolutely need to try:

La Vaca Flaca: The birria pizza. Rich braised beef, diced onion, radish, and cilantro, served with a side of consomé for dipping. This is the one people can’t stop talking about, and once you try it you’ll understand why.

Me Gustan Tus Piñas: Adobada with pineapple, red onion, jalapeño, cilantro, and house Frida poblana sauce. Sweet, smoky, and just spicy enough. A perfect balance from start to finish.

Mar y Tierra: Surf-and-turf done right. Sautéed shrimp, carne asada, avocado, tomato, jalapeño, and mayo-chipotle sauce. A flavor explosion on every single slice.

La Paisa: Carne asada, avocado, tomato, red onion, and cilantro on a Frida poblana base. This is taco-shop comfort food in pizza form, plain and simple.

Beyond the pizzas, don’t sleep on the wings and sides. The salsa verde wings and chipotle mango wings are standouts, and the “El Jefe balls” are fluffy garlic-butter dough bites that are exactly the kind of thing you order as a starter and end up fighting your table for. Fair warning.

And if you or someone at your table eats plant-based, El Jefe has genuinely thought about you. They offer dedicated vegan pizzas with vegan cheese and plant-based mock meats. The staff is also flexible with customizations, so don’t be shy about asking.

Why This Spot Matters to Our Community

It would be easy to overlook Pizzeria El Jefe from the outside. Strip-mall setting, no flashy signage, no gimmicks. But that’s part of what makes it a real community spot. Jose and Anna built something here that belongs to this neighborhood, a family business rooted in Mexican culinary tradition, run by people who show up every day and put their names on every pie that goes out the door.

The new Broadway location is a step up in space, but none of that soul has been traded away in the process. If you visited the old spot back in the day and loved it, come see what they’ve grown into. And if you’ve never tried El Jefe, honestly, what are you waiting for? This is the good stuff, right here in our own backyard.
